SHAVAGE UPMA (VERMICELLI UPMA)


In those rush hours of the morning when every one’s in a hurry, I have to make something which is quick to cook, is healthy and filling. I often land up making this Upma as it can be made every time with different variations ...which could be either the spices or the veggies. I find it the best way of making a nutritive breakfast by adding more veggies to it.
But this time I made it when kids are enjoying their holidays and I enjoy my lazy mornings(one needs simple dishes then also :) ) . I made a very simple version of this and to my satisfaction the kids liked it and asked for a second helping.
The recipe goes like this
Ingredients:
2 cups vermicelli
2 medium sized onions (chopped)
1 large tomato-chopped
1 small carrot chopped (one can add his/her own choice of veggies)
5-6 finely chopped green chillies
2 tsp lemon juice
few curry leaves
1 tsp mustard seeds
a small handful of peanuts
1 tbsp mix of chana and urad dal
6-7 tbsp oil
2 dry red chillies
1/2 tsp turmeric powder
1 tsp chilli powder(optional)
2 cups boiling water (approx)
salt to taste
METHOD:
Heat oil and mustard seeds , once they crackle ..add the dal mix followed by peanuts , green chillies , curry leaves and red chillies. Saute till the peanuts are properly fried. Now add the onions and carrots saute for a minute and then add tomatoes . Add the salt and cook till tomatoes are tender ..now add the remaining spices and mix ...add vermicelli and toss it properly in the spice mix. Add the lemon juice and gradually add the hot water (if you find this method difficult ..cook vermicelli as per the instructions on the pack and then add). Bring the water to a boil and then cover and cook on a low flame till the vermicelli is done . Garnish with coriander and serve with curds.
